Is it possible to convert holley 750 with dual fuel inlets into a double pumper?

Possible, but not logical, as machine work on the main body would be required. You'd also need a double pumper rear bowl, and a rear metering block, if yours isn't so equipped.
Fyi, I have an old "parts" 750 dp carb. [4779]. I'll look to see what all I have if you like. Fwiw, imo, a double pump belongs only on a drag car, and only then if it has enough gear and convertor.

I think I will stick with my carb the way it is. I saw many parts made for these carbs and thought I would throw it out there.

Assuming you have a #3310-3 or later, or the newer version with elect choke, it probably doesn't have a rear metering block. That's probably the only thing I'd do to it. Probably a good carb, although it might be a tad smallish for a stout 500".
